Baby greens and peaches salad

Main ingredients: 10 ripe peaches, 3 cups of mixed baby greens, 8 tablespoons of gorgonzola cheese

Add-ons: balsamic vinegar, sea salt, olive oil, and pepper

Directions: Preheat your oven to 375 degrees. Slice the peaches in half and tuck about half a tablespoon of Gorgonzola in each fleshy center. Put the peaches halves, cut side up, and sprinkle with two tablespoons of vinegar, salt, and pepper to taste. Set aside until the greens are ready. In a large bowl, toss the greens with a drizzle of olive oil and two tablespoons of vinegar, salt, and pepper to taste. Slide the baking sheet into the oven and cook the peaches until the cheese begins to melt, which should take you about three minutes. You can arrange the salad on individual plates, allotting four or five stuffed peaches per person. You can crumble a bit of Gorgonzola cheese on top of each salad before serving.
